Cauliflower contains allicin, which has been credited with improving heart health as well as reducing the risk of suffering a stroke by maintaining a healthy level of cholesterol. Consuming raw cauliflower juice will also ensure the intake of selenium, a compound that aids in immune functions. Another nutrient found in cauliflower is folate, a B vitamin that is used on a cellular level. It is due to this abundance of folate that cauliflower juice is recommended for pregnant women, to help with fetal development. Most recently, it has been discovered that cauliflower contains indole-3 Carbinol, a compound that influences the metabolism of estrogen. This compound has been found to help prevent breast and ovarian cancer.
